Roast Garlic and Mint Tabbouleh
Ingredients

½ cup bulgur
-
1 small cucumber, diced
-
1 large tomato, diced
-
1 tsp salt
-
1/2 cup parsley, finely chopped
-
1/4 cup chopped fresh mint
-
1/4 cup extra-virgin olive oil
-
1/4 cup Roast Garlic and Mint Sauce

Method:

Cook the bulgur according to package directions. Drain off any excess water, and set aside to cool.

In a bowl combine the diced cucumber and tomato with ½ teaspoon of the salt. Stir, and let the mixture rest for at least 10 minutes, or until you’re ready to mix the salad.

Drain the liquid from the bowl and then add the cooled bulgur, mint and parsley.

Toss the tabbouleh with the oil and Roast Garlic and Mint Sauce, and enjoy!
