Roast Garlic and Mint Winter Veggies
Ingredients

1 whole butternut pumpkin, cut into wedges

4 small orange carrots
-
4 small purple carrots
-
4 parsnips
-
oil
-
salt

1/4 cup of Roast Garlic and Mint Sauce
Method:

Preheat your oven to 180 degrees.

In a roasting dish put in all your vegetables and coat in oil. Sprinkle with a few pinches of salt and then cook in the oven until tender and browning, about 30-60 minutes.

Whilst still warm lather the vegetables in the Roast Garlic and Mint Sauce and allow to cool slightly, sopping up the sauce. Serve and enjoy!
